Sautéed zucchini side dish.

A healthy and easy-to-create zucchini side dish that compliments many entrees adding color and taste.

This recipe will jazz up the mild flavor of zucchini and keeping the skin on will contribute a source of fiber.

Yield:

Two servings.

Ingredients

One medium fresh zucchini.

One medium vine ripe tomato.

Two tablespoons of frozen corn.

Two tablespoons of freshly grated parmesan cheese.

One teaspoon of butter

One teaspoon of water

1/2 teaspoon of salt and 1/4

teaspoon of fresh ground pepper or to taste.

Preparation.

  1. Wash the zucchini and tomato thoroughly under cold running water.
  2. On a clean acrylic cutting board: Slice zucchini into 1/4-inch-thick slices and chop tomato into small chunks. Do not cut zucchini and tomato too small to avoid becoming mushy during cooking.
  3. Melt butter slowly in a 6-inch sauté pan on medium heat.
  4. Add zucchini to the pan and toss lightly with a plastic spatula until each slice is coated with butter…
