Sugar Cookies! Yes, I will Have One!

This delightful recipe is for the cookie connoisseur with a discerning holiday sweet palate.

Ingredients:

1 pound of butter.

1 cup of icing sugar.

1/2 cup of cornstarch.

3 cups of white flour.

Measuring and Mixing:

  1. In a mixing bowl place, softened butter in the mixing bowl. Whip on high until fluffy.
  2. Measure the cornstarch, flour, and icing sugar, then sift them all together in a large bowl. (A sifter adds lightness to the dry ingredient mixture.)
  3. Add dry ingredients to whipped butter. Mix with a sturdy spoon or with gloved hands.

Cooking Instructions:

  1. Set the oven at 350 degrees with the rack placed in the middle of oven.
  2. Using a tablespoon cookie scoop put each ball in rows on a sheet pan (do not grease pan.) (Cookies spread minimally during the cooking process.)
  3. With a regular teaspoon, make a shallow indent into each cookie ball. If the dough becomes sticky, dip the spoon in cold water (shake excess water off.)
  4. Fill the depression with any flavor of jam, candied fruit, chocolate, or colored sugar sprinkles.
  5. Cook for 10 to 12 minutes. (Slightly brown on the bottom of the cookie.)
  6. Remove from oven carefully with a spatula and place on a cooling rack. Cookies are very fragile.

Storage:

Keep cookies neatly arranged in a covered plastic or glass container in the fridge or freezer.

Yield:
50 perfect cookies.
