Cauliflower is a versatile vegetable that adds color and nutrition to dishes, such as a mixed steamed vegetable dish with carrots and broccoli, baked mac and cheese, or spaghetti sauce with or without pasta.

Did you know that when selecting a cauliflower, you should look for a pure color without dark spots and fresh green leaves? It should be firm to the touch and crunchy to bite. To store it, keep it in the fridge attached to its root and in a sealed plastic bag; keeps well for about a five to six days.

Cauliflower is a cruciferous vegetable that provides insoluble fiber.

Raw or al dente is recommended when adding cauliflower to a dish cooking to avoid overcooking and becoming a mushy texture.

It’s also easy to sauté or roast with a combination of vegetables, and you can eat it raw with or without a dipping sauce.

This side dish has been a hit at many potlucks! It’s easy to prepare and super yummy. Here’s how you can make it.

Preparation Time: 20 minutes

Baking Time: 60 minutes (center should be bubbly hot)

Oven Temperature: 350 degrees

Servings: Approximately 10 - 1/2 cup

Kitchen Tools

  • Large bowl.
  • Large spoon.
  • Cheese grater.
  • Sharp knife.
  • Acrylic cutting board.
  • 1.5-quart glass casserole dish with a lid.

Ingredients

  • 1 fresh average-sized cauliflower head.
  • 1 cup of grated cheese.
  • 2 tablespoons of freshly grated parmesan.
  • 1/2 cup sour cream to adequately coat each cauliflower piece.
  • Salt & pepper to taste.
  • 1 tablespoon of chopped roasted chili peppers.
  • 1 teaspoon of red pepper flakes.

Directions

1. Combine the cheese, sour cream, chilis, and seasonings in a large bowl.

2. Cut the cauliflower into bite-size pieces.

3. Blanch the cauliflower (don’t overcook al dente) and drain thoroughly.

4. Add the blanched cauliflower into the bowl and combine.

5. Put the mixture into a casserole dish.

6. Sprinkle parmesan cheese on top.

7. Bake covered at 350 degrees for 45 minutes, then remove the lid and bake an additional 15 minutes to get the top parmesan bubbly.

Notes:

You can pre-prepare this dish and store it in the fridge for one to two days.

Keeps wells refrigerated and covered for five to six days. Reheat a short time in the microwave as desired.
