White chocolate and lemon shortbread cookies.

Create only with the following high-quality ingredients!

Ingredients:

3 cups of white flour.

1 pound of butter.

1 cup of icing sugar.

1/2 cup of cornstarch.

11 oz package of white chocolate chips.

1 tablespoon of fresh lemon juice.

Measuring and mixing:

  1. In a mixing bowl place, softened butter in the mixing bowl. Whip on high until fluffy.
  2. Beat in lemon juice.
  3. Stir in white chocolate chips
  4. Measure the cornstarch, flour, and icing sugar, then sift them all together in a large bowl. (A sifter adds lightness to the dry ingredient mixture.)
  5. Add dry ingredients to whipped butter. Mix with a sturdy spoon or with gloved hands.

Cooking instructions:

  1. Set the oven at 350 degrees with the rack placed in the middle of oven.
  2. Using a tablespoon cookie scoop put each ball in rows on a sheet pan (do not grease pan.) (Cookies spread minimally during the cooking process.)
